I see a lot of discussion elsewhere about which is better, over or under-supering and even about what these terms mean. What has been most successful for you?

Over for gathering honey in late Spring-Late Summer. Then after extracting the honey you can put one super with wet frames under the brood chamber for winter. I do this mainly so I have less supers to store in winter, but it also raises the brood up higher, so I guess easier to keep themselves warm. Then in April I just put the super back above the brood (with queen excluder) and the bees start filling it again.
